Linguini with Pesto, Beans and Potatoes
My husband had this pasta at Trattoria da Mamo in Venice a few years ago, and has been asking me to make it ever since. I found Mario Batali's recipe on Food and Wine's website. This came out pretty close to what my husband remembers having at the restaurant.
I could not find trenette pasta so I used linguini fini.
The recipe is pretty straight forward. You make the pesto in a food processor. Separately you quickly cook the beans, boil the potatoes and cook the pasta. Once everything is done combine the beans, potatoes and pasta in a large bowl and pour the pesto over everything until coated. Delizioso!
